Who would have thought that lasagna could be made without pre-cooking the ingredients. This slow cooker version of making lasagna requires just that – no pre-cooking only a little assembly. Made in a 4.5 liter slow cooker, the finished product will be about 3 inches (5cm) thick, but obviously the depth will depend on the size of the slow cooker you use.
Firstly gather all the ingredients. Then coat the slow cooker bowl with non-stick spray oil and preheat the slow cooker by turning it on to High.
2 cloves garlic, peeled and finely chopped
1 x 14 oz (400g) can whole or diced tomatoes in juice
1 x 1 oz (30gm) packet tomato soup, or tomato and onion soup mix
1lb (500g) minced beef
1/4 cup tomato paste
1 teaspoon each dried basil and oregano
2 teaspoons instant dried beef stock
1 cup hot water
3-4 cups small lasagna shapes or a packet of long lasagne sheets
3 teaspoons cornflour
1 large egg
1 cup milk, sour cream, or a mixture
1 cup grated tasty cheese
paprika to sprinkle on top (optional)
Place the chopped garlic and tomatoes along with the juice into a food processor or a large bowl and process briefly or mash with a fork to break op the tomatoes. Add the dried soup mix, minced beef, tomato paste, herbs, dried stock and water, and mix until well combined.
Spread one third of the meat mixture evenly over the base of the slow cooker bowl. Place half the lasagna shapes or cover with full lasagna strips, overlapping the edges. Repeat the layering with another third of the meat mixture, the remaining pasta shapes or strips then cover with the remaining meat mixture.
To make the topping, mix together the cornflour, egg, milk and/or sour cream and grated tasty cheese. Pour this over the top of the meat and pasta layers, spreading it evenly to cover the surface. Finish by sprinkling with paprika if you like then cover with the slow cooker lid.
Turn the slow cooker to Low and cook for 8-9 hours or leave on High and cook for 4 – 4 1/2 hours. There will be no need to stir just let it cook. When finished, serve straight from the cooker pot with a side of green salad and crusty garlic bread.
